Recipe Swap: Stromboli

Happy Friday folks!! Can you believe that it will be Thanksgiving in less than a week?!?! I can't think about it just yet, as this will be my first year to do the bulk of the cooking - with Mom's help and guidance, of course!

Instead, let's focus on a much simpler task! It's time again for another round of the Recipe Swap, hosted by my good friend Sarah from A Taste of Home Cooking! The theme for this round was Game Day Food, and I received this stromboli recipe from Lishie of  DeLish DeMaria. I've actually wanted to make stromboli for quite some time, so this worked out perfectly for me! It was quick, simple and super delicious!


Lishie had two variations of stromboli, one with eggplant and meatballs and one with just meatballs. I didn't need to make two, so I opted for the meatball only version. With the ricotta and mozzarella, it was really cheesy and the sauce and meatballs mixed really well into the cheese. Ooey gooey scrumptious! Meatball Stromboli

Ingredients
  • Flour for rolling the dough out
  • 1 can of Pillsbury Pizza Dough (I didn't have fresh pizza dough available, but if you do, use that!!)
  • 4-6 Italian-style meatballs (cooked)
  • 6 Tbsp ricotta cheese (I used low fat)
  • 4 Tbsp shredded mozzarella
  • 6 Tbsp pizza sauce
  • olive oil
  • 1-2 Tbsp grated Parmesan cheese
Preparation
  1. Preheat oven to 400 degrees F and line a large baking sheet with foil.
  2. Sprinkle flour onto counter or large cutting board and roll the pizza dough out into a rectangle.
  3. Chop the meatballs into bite-size pieces and line them down the center (longways) of the pizza dough. 
  4. Top the meatballs with the ricotta, mozzarella, and pizza sauce.
  5. Fold each side of the long sides of the dough over the center, pinching to seal, and then tuck the short ends underneath.
  6. Place the sealed stromboli onto the prepared  baking sheet. Poke a few holes in the top to allow steam to release while cooking, brush the top with a little olive oil, and sprinkle with parmesan cheese.
  7. Bake for 8-10 minutes, until dough is golden brown. Remove from oven and allow to sit for a few minutes before cutting and serving!

  2. This looks so quick to make, and I think it could use any ingredients that you might have left over. I wonder if you could make small ones?

  3. You could absolutely make small ones! Just cut the dough into smaller strips and use the same process. Maybe cut the cooking time down a bit, too. :)

  4. Ah stromboli. So good! This is my brother-in-law's go-to potluck dish. He uses frozen bread dough (makes 2 strombolis per bread loaf).
