Maple-Mustard Glazed Salmon


How was your weekend? I had the most amazing, productive weekend! I got more done in this one weekend than I have in the past several weekends combined. Don't you love those weekends? I know I do!

I wasn't home much on Saturday because I had a tiered cake class and then babysat Baby C, but I made up for that time away on Sunday for sure! My apartment is so clean I can hardly believe it!! And I managed to also cook lunch and dinner, bake a tasty dessert and still end the night with a clean kitchen. That, my friends, is an accomplishment.

Now, I just need to tackle my closet and weed out some clothes and free up some hangers. I'll just add that to the list for next weekend. For now, I'll just enjoy the results of my oh-so-productive weekend and share with you an amazing salmon dish. Do you think I cook too much salmon? Is that even possible? Nah. ;) It's so healthy and such a versatile fish. And this particular recipe is one of the best I've made so far. Of course, the flavor combo is not one that is new to me...Maple and Mustard are a great combo for glazes and marinades, for chicken, pork, or salmon. And a nice, thick glaze is just what this salmon needed. I paired it with some brown rice and sauteed asparagus, and it was one of the best overall meals I've had in awhile.

Maple-Mustard Glazed Salmon

Ingredients

For the glaze
  • 1/3 cup maple syrup
  • 3 tablespoons whole-grain mustard
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon finely chopped fresh thyme leaves
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
For the fish
  • 4 (6-ounce) salmon fillets, skin on
  • Vegetable oil, for oiling the grill and the fish
  • Kosher salt
  • Freshly ground black pepper

Preparation
  1. Preheat oven to 350 degrees F and line a baking sheet with foil.
  2. In a small saucepan over medium-high heat, combine all of the glaze ingredients and allow to come to a boil.
  3. Meanwhile, pat the salmon dry with paper towels. Drizzle vegetable oil on both sides of the fish and season with salt and pepper.
  4. Place the salmon on the prepared baking sheet, skin side down, and brush the top of the salmon with some of the glaze.
  5. Cook for 10-15 minutes until cooked through. Remove from oven, plate the salmon, and pour glaze over the tops. Serve immediately.
