Taco Tuesday: Coconut Lime Tilapia Tacos with Kiwi Salsa

Mondays suck. Especially yesterday. 


 
I had a plan. I was going to be so good and go to the gym for double my usual time, go home and work on some projects. But noooooo. Mother Nature had other, horrifying plans for me. The monsoon that decided to trample through town, took out the lights at the gym - fortunately I had already done my cardio - and the stop lights all the way back home. Ok, annoying, but not a disaster, right?
 
Then I pull into my complex...it seems that no one has any lights on. So, it's safe to assume we have also lost power. But as I pull up to my building I notice that my motorcycle (yes, I own one of those!), which has a lovely cover over it to protect it from the elements, looks a little...off. As I get closer I see that it is ON IT'S SIDE on the ground!! I whip into a parking spot haphazardly, assuming that some jackwagon has knocked it over and I am livid. My downstairs neighbor is outside waiting for me, and it seems that the monsoon brought with it some crazy winds, and those swooped right under my protective cover. lifted it, and threw my bike to the ground. My very heavy bike. My very expensive, I'm trying to sell it, bike.
 
I am now cursing Mother Nature and the tidal wave she rode in on. I sulk upstairs, to my apartment that has no power, starving after my workout, and I can't cook anything for dinner. This is the worst.Monday.ever. Gazing down at my bike from the patio, it's all I can do to not break down and cry. I light some candles and try to scrounge through the pantry for something I can eat. Peanut Butter and Honey sandwich it is.
 
About an hour later the power comes back on. At least now I have TV and Internet! It's too late now to get in the kitchen, so I watch some TV and wish for Tuesday to be a better day. It is Taco Tuesday after all!!! Leaving for work this morning, I was sad to see my bike still lying on the ground, but a few of my neighbors offered to help me pick it up, so I'll do that after work and assess the damage.
 
Boo to Mondays, but YAY for  Taco Tuesday! And I have a great one to share with you today!! Fish tacos are always great, but finding a new variation is always fun! I love kiwi, and since it's in season right now it is that much more delicious. Combine that with some jalapeno and yummy coconut marinated fish, and you have one damn tasty taco!! I cut my tilapia filets in half after I cooked them, and served the tacos that way, but you could shred the fish as well and it would be just as good!
 
These tacos could make any day better. And I definitely needed a better day!!
 

Coconut Lime Tilapia Tacos with Kiwi Salsa

Ingredients
  • 6 tilapia filets
  • 1/3 cup light coconut milk
  • 1 tsp freshly grated lime zest
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Flour tortillas
  • Shredded lettuce
  • Cilantro
  • Kiwi Salsa (recipe below)

Preparation
  1. Combine coconut milk, lime zest, salt, pepper and garlic in a bowl, stirring to combine. Place tilapia in a resealable plastic bag or shallow dish with a lid. Pour the coconut mixture over the fish, make sure they are well coated, and allow to marinate for a minimum of 2 hours. Overnight would be best.
  2. Preheat your grill, skillet or oven to a medium-high heat. Remove the tilapia from the marinade and put it on/in your desired cooking vessel, and cook for 3-4 minutes per side, until fish flakes with a fork.
  3. Warm your tortillas and add the fish, then top with shredded lettuce, cilantro and kiwi salsa.

Kiwi Salsa
  • 4 kiwi fruit, peeled and chopped
  • 2 Tbsp diced red onion
  • 1/2 jalapeno, chopped
  • 2 Tbsp chopped cilantro
  • pinch of salt
  • pinch of pepper

Combine all ingredients in a bowl and stir to mix! Add to your fish tacos and devour!
